Reset Meals and Recipes

Breakfast ideas

·      Oatmeal, buckwheat or quinoa with cashew/ almond butter, hemp seeds, pumpkin seeds, sliced almonds, cinnamon and apple or berries

·      Scrambled eggs with greens

·      Boiled eggs on rice cakes with avocado

·      Vegetable smoothie- blend 1 stalk celery, 1 carrot, ½ apple or pear, grated ginger, grated turmeric, spinach or arugula, beet crystals and water. Blend well. You can use lightly steamed veggies if your blender isn’t powerful enough.

·      Tofu Scramble

·      Apple slices with almond butter

·      Vanilla Chia Pudding (omit maple syrup)

·      Pumpkin Seed granola (omit maple syrup)

·      Protein shakes with almond milk or another alternative milk (please read ingredients of your shake to ensure there is no artificial sweeteners) *Ideally you want to avoid all sweeteners even stevia but do what works for your lifestyle and time allowances)

Lunch ideas

·      Leftovers *This is pretty much all I do for lunches because it makes the most sense for our budget and time allowances

·      Veggies and Tahini

·      Cauliflower and leek soup

·      Sweet potato Chickpea Buddha Bowl (omit maple syrup)

·      Vegan Potato Leek Soup

·      Tabouli Salad

·      Veggie and hummus

·      Carrot Quinoa Soup

Dinner ideas

·      Black Bean and Yam (it is also delicious on a bed of arugula and spinach

·      Sloppy Joe’s Done Green

·      Baked fish with lots of veggies

·      Squash with butter and added choice of protein

·      Ground beef pasta sauce on a bed of arugula (substitute ground chicken, tofu or lentils)

·      Vegetarian Burritos – 1 can baked beans, 1 can refried beans, tomatoes, peppers, onion, garlic, and taco seasoning. You can add chicken or beef or other beans. Serve over lettuce for yourself and wraps for the rest of the family. Top with almond yogurt, salsa, cucumbers, tomatoes and green onions.
