Chocolate Avocado Pudding
Ingredients
2 or more avocado’s- The more avocados you have, the easier it is to blend. If you only have 1, you can make this pudding, but you may have to mix by hand (it won’t get a creamy this way) or use a smaller blender accessory. If you have a hand mixer, it would work really well for smaller batches. This recipe works really well for those avocados that don’t look so pretty because of discoloration but still taste great.
2-6 tbsp cocoa powder- depending on how bitter you want your pudding. Cocoa powder is a great source or minerals especially magnesium.
1-2 ripe bananas- the riper the better because it will add more sweetness to the pudding
Maple syrup or honey to taste
You can double or triple ingredients to make a large batch. Pudding freezes well is small containers for a quick treat.
Options to add:
· Hemp seeds (protein)
· Sesame seeds (calcium and magnesium)
· Flax seeds (fiber)
· Shredded coconut
· Salt (minerals)
· Chopped nuts (protein, minerals)
· Protein power (extra protein)
Directions
· Mix together ingredients until smooth. You can do this my hand or in a blender. If you use a mixer/blender/hand mixer, it makes the pudding creamier.
· Scrape into a bowl and enjoy.
· If freezing, it works best to freeze in small single size containers.
· Keeps in the fridge for 2-3 days depending on how fresh avocados were to start.
